Each fortnight we will have a key ingredient or theme for your recipes to be based on and we invite readers to submit their favourites. They need to be home- made, very easy to prepare and with ingredients avail- able from local super- markets or shops. We ll publish our favour- ite one for that week. After spending Christmas with friends in our bach at the beautiful Whiritoa Beach, it became apparent that fridge space was at a premium when storing cold food safely. After the traditional Christmas dinner we were faced with leftovers on Box- ing Day. This is how my friend Michelle and I came up with the following recipe for lunch. There are no measure- ments and you can use any- thing you have to hand. I will give you exactly what was in ours but you can adjust to suit and once in a while won t be too unhealthy to have. Leftover, day-after hash patties Leftover roast veggies -- we had potatoes, kumara, pumpkin, beans, peas, baby carrots. We put all the veggies into a large bowl, mashed it up and added two finely sliced spring onions, one can of drained salmon (any meat would do or leave out), a couple of dollops of chut- ney, onion marmalade, cranberry sauce and season- ing. I used herbed salt and black pepper. It s best to take off any rings you may be wearing as this can get messy. Scoop mounds from the mixture and shape them into patties. Cover them completely with flour and put on to a well greased or baking papered tray. Chill for at least one hour. When ready, transfer the patties into a frypan with a little oil and butter (we used garlic butter) and fry until golden on both sides. Serve with salad and chutneys, sour cream or guacamole -- or both! Please submit your favourite homemade recipes with the key ingredient being berries. Email to dkchambers@ xtra.co.nz by February 9.
